Make crispy, flavorful Lemon Garlic Roasted Chickpeas. This recipe fixes common roasting issues, giving you a perfectly crunchy and bright snack to replace packaged options. We promise this version works every time.

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and patted very dry
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rinse the canned chickpeas well under cold water.
  3. The secret to crispiness: Dry the chickpeas thoroughly using a clean kitchen towel or paper towels. Remove any loose skins.
  4. In a medium bowl, toss the dried chickpeas with olive oil, garlic powder, salt, and pepper until evenly coated.
  5. Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  6. Roast for 20 to 25 minutes, shaking the pan halfway through, until they are golden brown and crunchy.
  7. Remove the chickpeas from the oven. Immediately transfer them to a clean bowl.
  8. While still hot, toss them with the fresh lemon zest and lemon juice.
  9. Let them cool slightly before serving. They will crisp up more as they cool.

Notes

  • Drying the chickpeas completely is the most important step for achieving maximum crunch.
  • Do not skip shaking the pan during roasting; this helps them cook evenly.
  • Store leftovers in a loosely covered container at room temperature for up to three days. An airtight container will make them softer.
