Make crispy potatoes bursting with bright lemon and strong garlic flavor. This recipe delivers golden edges and punchy seasoning for an exceptional side dish.

Ingredients

Scale
  • 2 lbs Yukon Gold potatoes, cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the cut potatoes in a large bowl.
  3. Drizzle the potatoes with olive oil, minced garlic, salt, pepper, and oregano. Toss well to coat every piece evenly.
  4. Spread the seasoned potatoes in a single layer on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary for crispness.
  5. Roast for 30 to 35 minutes, flipping the potatoes halfway through cooking.
  6. Remove the pan from the oven. Immediately sprinkle the lemon zest over the hot potatoes and toss.
  7. Drizzle with fresh lemon juice and toss again.
  8. Return to the oven for another 5 to 10 minutes, until the potatoes are deeply golden brown and crisp.
  9. Transfer to a serving dish. Garnish with fresh chopped parsley before you serve them.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then dry them completely before seasoning.
  • Do not substitute fresh garlic with dried; the fresh flavor is key here.
  • Use Yukon Gold potatoes as their texture crisps well without becoming too dry.
