Ingredients

  • Graham Cracker Crumbs: 1 1/2 cups
  • Melted Butter: 1/4 cup
  • Cream Cheese, softened: 16 ounces
  • Granulated Sugar: 3/4 cup
  • Lemon Zest: 1 tablespoon
  • Lemon Juice: 2 tablespoons
  • Vanilla Extract: 1 teaspoon
  • Large Eggs: 2
  • Sour Cream: 1/4 cup
  • Raspberry Topping or Fresh Raspberries: 1 cup

Instructions

  1. Preheat your oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners.
  2. Combine graham cracker crumbs and melted butter in a bowl. Mix well.
  3. Press about 1 1/2 tablespoons of the crumb mixture into the bottom of each liner. Bake for 5 minutes. Remove from the oven and let cool slightly.
  4. In a large bowl, beat the softened cream cheese and sugar until smooth. Scrape down the sides.
  5. Add lemon zest, lemon juice, and vanilla extract. Mix until just combined.
  6. Beat in the eggs one at a time, mixing on low speed after each addition.
  7. Stir in the sour cream until the batter is smooth. Do not overmix.
  8. Spoon the cheesecake batter evenly over the crusts, filling each cup about three-quarters full.
  9. Bake for 18 to 20 minutes, or until the edges are set. The centers may still jiggle slightly.
  10. Turn off the oven. Prop the oven door open a crack and let the cheesecakes cool slowly in the oven for 30 minutes. This prevents cracking.
  11. Remove the cups from the oven and cool completely on a wire rack.
  12. Chill in the refrigerator for at least 4 hours, or preferably overnight.
  13. Top each cheesecake cup with raspberry topping or fresh raspberries just before serving.

Notes
