- 1 Lemon, halved
- 4 Sprigs Fresh Thyme
- 2 Tablespoons Olive Oil

- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- Rub the chicken all over with olive oil.
- Season generously with salt and pepper.
- Place the lemon halves and thyme sprigs inside the chicken cavity.
