  • 1 cup granulated sugar
  • ½ cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup finely grated zucchini (about 1 small zucchini)
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the grated zucchini, lemon juice, and lemon zest.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan.
  10. While the bars are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth and pourable. Add more lemon juice a teaspoon at a time if needed to reach desired consistency.
  11. Once the bars are completely cool, drizzle the glaze evenly over the top.
  12. Let the glaze set before cutting into bars.
