- 1 cup brown or green lentils, cooked
- 1 cup walnuts, toasted
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 egg, beaten (or flax egg for vegan)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Toast walnuts in a dry skillet over medium heat until fragrant. Let cool.
- In a food processor, pulse toasted walnuts until coarsely ground.
- Add cooked lentils to the food processor with walnuts. Pulse until combined but not a paste.
- Transfer mixture to a bowl. Stir in breadcrumbs, chopped onion, minced garlic, beaten egg, olive oil, smoked paprika, cumin, salt, and pepper.
- Mix well until everything is combined.
- Form the mixture into 4-6 patties.
- Cook patties in a lightly oiled skillet over medium heat for 5-7 minutes per side, until golden brown and heated through.
