This Loaded Beef Enchilada Casserole is an easy, family-favorite recipe. It’s a delicious one-pan meal inspired by Mexican flavors, perfect for a comforting and simple dinner.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can red enchilada sauce
  • 1 (8 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 corn tortillas, cut into strips
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  3. Stir in the minced garlic, rinsed black beans, enchilada sauce, and undrained diced tomatoes and green chilies. Bring the mixture to a simmer.
  4. Add the corn tortilla strips to the skillet and stir to coat them in the beef mixture.
  5. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top.
  6. Cover the skillet with a lid or foil and bake for 20 minutes.
  7. Remove the cover and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  8. Serve hot, with your favorite optional toppings.

Notes

  • For a spicier casserole, use a hot enchilada sauce or add an extra jalapeño.
  • If you don’t have corn tortillas, you can use flour tortillas, but they may become softer.
  • This casserole can be assembled ahead of time and baked just before serving.
