  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 12 large (10-inch) flour tortillas
  • Optional: Salsa, sour cream, avocado for serving

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. In a non-stick skillet over medium heat, cook sausage until browned. Drain off any excess grease.
  3. Add chopped onion and bell pepper to the skillet with the sausage. Cook until softened, about 5-7 minutes.
  4. Pour the egg mixture into the skillet with the sausage and vegetables. Cook, stirring occasionally, until the eggs are set but still moist.
  5. Remove from heat and stir in the cheddar and Monterey Jack cheeses until melted.
  6. Warm the tortillas slightly to make them pliable.
  7. Spoon about 1/2 cup of the egg mixture onto the center of each tortilla.
  8. Fold in the sides of the tortilla, then tightly roll up from the bottom to create a burrito.
  9. Wrap each burrito individually in plastic wrap, then in aluminum foil.
  10. Place wrapped burritos in a freezer-safe bag or container. Freeze for up to 2 months.
  11. To reheat, remove foil and plastic wrap. Microwave on high for 2-3 minutes, or until heated through. You can also reheat in a 350°F (175°C) oven for 15-20 minutes.

  • You can customize your burritos with your favorite fillings like black beans, corn, or different types of cheese.
  • For a spicier kick, add a pinch of red pepper flakes to the egg mixture.
