  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 cups cooked white or brown rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • Optional Toppings: Shredded cheese, sour cream, salsa, guacamole, lime wedges

Instructions

  1. Combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper in a small bowl for the chicken seasoning.
  2. Pat chicken dry and toss with the seasoning mix until fully coated.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add seasoned chicken to the skillet and cook for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Remove chicken from the skillet and let it rest for 5 minutes before shredding or dicing.
  6. While the chicken rests, quickly sauté the diced red bell pepper and sliced red onion in the same skillet for 3-4 minutes until slightly tender-crisp.
  7. Assemble the bowls: Divide the cooked rice among serving bowls.
  8. Top the rice evenly with the cooked chicken, black beans, corn, sautéed peppers and onions.
  9. Garnish generously with fresh cilantro and your preferred toppings.
  10. Serve immediately with lime wedges.

Notes

  • For meal prep, store the cooked chicken, rice, and vegetable mixture separately from wet toppings like salsa or sour cream.
  • To easily shred the chicken, place it in a stand mixer with the paddle attachment and mix on low speed for 30 seconds.
