  • 1 lb ground turkey or lean ground beef
  • 1 packet taco seasoning
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1/2 red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • Optional toppings: avocado, salsa, sour cream, jalapenos

Instructions

  1. Brown the ground turkey or beef in a skillet over medium-high heat. Drain off any excess fat.
