Loaded Taco-Stuffed Potatoes offer a fun and flavorful Tex-Mex dinner. Imagine fluffy baked potatoes filled with seasoned taco meat or beans, melted cheese, and your favorite taco toppings. It’s a delicious combination of comforting potatoes and vibrant taco tastes.

Ingredients

Scale
  • 4 large baking potatoes
  • 1 pound ground beef or 2 cans (15 ounces each) black beans, rinsed and drained
  • 1 packet taco seasoning
  • 3/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro, sliced jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the potatoes and prick them all over with a fork.
  2. Bake the potatoes directly on the oven rack for 50-60 minutes, or until tender when pierced with a fork.
  3. While the potatoes are baking, cook the ground beef in a skillet over medium-high heat. Drain off any excess fat. If using beans, skip this step.
  4. Add the taco seasoning and water to the skillet with the beef (or to a separate saucepan if using beans). Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened. If using beans, stir in the taco seasoning and heat through.
  5. Once the potatoes are tender, carefully remove them from the oven. Let them cool slightly, then slice them in half lengthwise.
  6. Gently scoop out most of the cooked potato flesh, leaving about a 1/2-inch border to create a shell. Place the scooped-out potato flesh into a bowl.
  7. Add the cooked taco meat or beans, onion, bell pepper, cheddar cheese, and Monterey Jack cheese to the bowl with the potato flesh. Mix gently until combined.
  8. Spoon the potato and taco mixture back into the potato shells.
  9. Return the stuffed potatoes to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  10. Serve hot with your favorite taco toppings.
