- 4 cups cauliflower florets (about 1 small head)
- 2 tablespoons olive oil
- 1/2 cup chopped yellow onion
- 1/2 cup chopped celery
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried sage
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- Preheat your oven to 375°F (190°C).
- Pulse cauliflower florets in a food processor until they resemble coarse crumbs.
- Heat olive oil in a large skillet over medium heat. Add onion and celery and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the cauliflower “rice”, parsley, sage, and thyme. Season with salt and pepper.
- Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender-crisp.
- Transfer the mixture to a baking dish.
- Bake for 15-20 minutes, or until heated through and slightly golden.
Notes
- For a crispier topping, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
- Feel free to add other herbs like rosemary or marjoram to your preference.
- You can add cooked sausage or bacon for extra flavor and protein.
