- 2 lbs yellow squash, thinly sliced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup chopped onion
- 2 large eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crushed pork rinds (for topping)
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced squash, cheddar cheese, sour cream, mayonnaise, chopped onion, beaten eggs, salt, and pepper.
- Mix everything together until well combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Top with the crushed pork rinds.
