1 teaspoon ground cinnamon
1 teaspoon granulated sugar
1/4 teaspoon salt
8 (6-inch) corn tortillas
1 ripe mango, peeled and diced
1/4 cup finely diced red onion
1/4 cup chopped fresh cilantro
1 tablespoon lime juice
1/4 teaspoon red pepper flakes (optional)

Instructions
Preheat your oven to 350°F (175°C).
In a small bowl, combine olive oil, cinnamon, sugar, and salt.
Brush both sides of each tortilla with the cinnamon-sugar mixture.
Cut each tortilla into 8 wedges.
Arrange the wedges in a single layer on a baking sheet.
Bake for 10-12 minutes, or until golden brown and crisp.
