Make classic Thai Mango Sticky Rice using sweet glutinous rice soaked in rich coconut cream and served with fresh, ripe mango.

1 cup glutinous rice (sweet rice)
1 cup water (for cooking rice)
1 can (13.5 oz) full-fat coconut milk
1/2 cup granulated sugar
1/2 teaspoon salt
1 tablespoon coconut oil or neutral oil
2 ripe Ataulfo or Nam Dok Mai mangoes, peeled and sliced
2 tablespoons toasted sesame seeds (for garnish)
Instructions
Rinse the glutinous rice thoroughly under cold water until the water runs clear. Soak the rice in fresh water for at least 4 hours, or preferably overnight. Drain the soaked rice well.
Steam the drained rice for 20 to 25 minutes until tender and cooked through. Alternatively, cook the rice in a rice cooker with 1 cup of water until done.
While the rice cooks, prepare the coconut sauce. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium-low heat, stirring until the sugar and salt dissolve completely. Do not boil.
Transfer the hot, cooked sticky rice to a large bowl. Pour about 3/4 of the prepared coconut sauce over the rice. Stir gently to combine. Cover the bowl with a lid or plastic wrap and let it sit for 30 minutes to allow the rice to absorb the liquid.
Stir in the coconut oil into the rice mixture.
To serve, place a portion of the sweetened sticky rice on a plate. Arrange slices of fresh mango next to the rice.
Drizzle the remaining coconut sauce over the rice and mango. Garnish with toasted sesame seeds. Serve immediately or at room temperature.
Notes
Use only glutinous rice (sweet rice); regular white rice will not achieve the correct sticky texture.
For a richer sauce, use only the thick cream from the top of an undisturbed can of coconut milk for the sauce base.
Ataulfo or Nam Dok Mai mangoes provide the best flavor and texture for this dessert.
