You will make wonderfully tender pork chops coated in a sweet and savory maple-apple glaze. This recipe captures the cozy feeling of fall and winter in one simple, satisfying main dish.

Ingredients

Scale
  • 4 bone-in pork chops (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium apple (like Honeycrisp or Gala), thinly sliced
  • 1/2 cup pure maple syrup
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides evenly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 3 to 4 minutes per side until golden brown. Remove the chops and set them aside.
  3. Reduce the heat to medium. Add the sliced apples to the same skillet. Cook for 3 to 5 minutes until they begin to soften slightly.
  4. In a small bowl, whisk together the maple syrup, apple cider vinegar, and Dijon mustard.
  5. Pour the maple mixture over the apples in the skillet. Bring the sauce to a simmer.
  6. Return the pork chops to the skillet, nestling them among the apples. Sprinkle with fresh thyme.
  7. Reduce the heat to low, cover the skillet, and let the pork chops simmer gently for 8 to 12 minutes, or until the internal temperature reaches 145°F.
  8. Remove the pork chops and let them rest for five minutes before serving. Spoon the apple-maple sauce over the top.

Notes

  • Use a sturdy apple variety that holds its shape well during cooking.
  • For extra flavor, you can briefly deglaze the pan with a splash of bourbon before adding the maple syrup mixture.
  • This dish pairs well with mashed sweet potatoes or roasted Brussels sprouts.
