These roasted carrots are tossed in a sweet and tangy maple-Dijon glaze until tender and caramelized. It’s a simple and delicious side dish perfect for any meal.

  • 1.5 pounds carrots, peeled and cut into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast for 20 minutes.
  5. While the carrots are roasting, whisk together the maple syrup and Dijon mustard in a small bowl.
  6. Remove the carrots from the oven and drizzle the maple-Dijon glaze over them. Toss to coat.
  7. Return the carrots to the oven and roast for another 10-15 minutes, or until tender and slightly caramelized.

Notes

  • For sweeter carrots, use pure maple syrup.
