2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Pinch of salt
Pinch of black pepper
2 tablespoons maple syrup
Optional: Cooked breakfast sausage or bacon, chopped
Optional: Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a medium bowl, toss the diced sweet potatoes with olive oil, cinnamon, nutmeg, salt, and pepper until evenly coated.
Spread the sweet potatoes in a single layer on a baking sheet.
Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
Remove the baking sheet from the oven. Drizzle the maple syrup over the roasted sweet potatoes and toss gently to coat.
If using, add the chopped cooked sausage or bacon to the hash and toss to combine.
