  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon matcha powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 225°F (107°C). Line baking sheets with parchment paper.
  2. In a clean, dry bowl, whip the egg whites with an electric mixer on medium speed until foamy.
  3. Add the cream of tartar and continue whipping until soft peaks form.
  4. Gradually add the granulated sugar, one tablespoon at a time, while continuing to whip on high speed. Whip until stiff, glossy peaks form and the sugar is completely dissolved.
  5. Gently fold in the matcha powder and vanilla extract until just combined. Be careful not to overmix.
  6. Spoon or pipe the meringue onto the prepared baking sheets, creating small kiss shapes.
  7. Bake for 60-75 minutes, or until the meringues are dry to the touch and lift easily off the parchment paper.
  8. Turn off the oven and let the meringues cool completely in the oven with the door slightly ajar. This prevents cracking.

  • Room temperature egg whites whip up better than cold ones.
