1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch chunks
1 green bell pepper, cut into 1-inch chunks
1 red onion, cut into 1-inch chunks
1/4 cup olive oil
1/4 cup lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
If using wooden skewers, soak them in water for at least 30 minutes.
In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Add the chicken pieces to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Thread the marinated chicken, red bell pepper chunks, green bell pepper chunks, and red onion chunks onto the skewers, alternating the ingredients.
Preheat your grill to medium-high heat.
Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
