Make this refreshing salad combining sweet watermelon, salty feta, crisp cucumber, and a bright mint-lime dressing. It is a simple, no-cook dish perfect for summer meals.

Ingredients

  • 6 cups cubed seedless watermelon
  • 1 cup crumbled feta cheese
  • 1 English cucumber, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon lime zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the cubed watermelon, crumbled feta, sliced cucumber, chopped mint, and sliced red onion in a large bowl.
  2. In a small bowl, whisk together the lime juice, olive oil, lime zest, salt, and pepper to make the vinaigrette.
  3. Pour the vinaigrette over the salad ingredients.
  4. Gently toss the salad until everything is lightly coated.
  5. Serve immediately for the best texture, or chill for up to 30 minutes before serving.

Notes

  • Choose a very ripe, firm watermelon for the best cubes.
  • If you prefer a milder onion flavor, soak the sliced red onion in cold water for 10 minutes, then drain well before adding to the salad.
  • For a variation, add 1/2 cup of Kalamata olives.
