A creamy and decadent chocolate pudding with a warm, spicy kick inspired by Mexican hot chocolate. This dessert features cinnamon and a hint of chili for a unique flavor experience.

  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper (optional)
  • 3 cups milk
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, salt, cinnamon, and cayenne pepper (if using).
  2. Gradually whisk in the milk until smooth.
  3. In a small bowl, whisk the egg yolks. Temper the egg yolks by slowly whisking about 1/2 cup of the warm milk mixture into the yolks. Then, pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture.
  4. Cook over medium heat, stirring constantly with a whisk, until the pudding thickens and comes to a gentle boil. This should take about 8-10 minutes.
  5. Once thickened, remove the saucepan from the heat. Stir in the butter and vanilla extract until the butter is melted and incorporated.
  6. Pour the pudding into individual serving dishes or a single large bowl.
  7. Cover the surface of the pudding directly with plastic wrap to prevent a skin from forming.
  8. Chill in the refrigerator for at least 2 hours, or until firm.
  9. Serve cold.

Notes

  • For a stronger chili flavor, increase the cayenne pepper to 1/4 teaspoon.
  • You can add a pinch of ground cloves for extra spice.
  • Garnish with whipped cream and a sprinkle of cinnamon before serving.
