  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and chopped bell peppers to the skillet. Cook for another 5 minutes until the peppers begin to soften.
  4. Stir in the diced zucchini and yellow squash. Cook for 7-10 minutes, stirring occasionally, until the squash is tender-crisp.
  5. Add the drained corn, diced tomatoes and green chilies (with their liquid), chili powder, cumin, and cayenne pepper (if using). Season with salt and black pepper to your liking. Stir everything to combine.
  6. Cook for 5 minutes more, allowing the flavors to meld.
  7. Pour the mixture into a 9×13 inch baking dish.
  8. Sprinkle the shredded Monterey Jack and cheddar cheeses evenly over the top.
  9. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  10. Let it rest for a few minutes before serving.

Notes

  • For a spicier casserole, add a pinch more cayenne pepper or a diced jalapeño along with the bell peppers.
  • You can add cooked shredded chicken or ground beef to make this a heartier meal.
  • Feel free to substitute other vegetables like mushrooms or spinach.
