This Mexican street corn dip recipe is inspired by elote. It’s a cheesy, spicy, party-friendly dip perfect for serving with chips at your next gathering. It’s easy to make and always a crowd-pleaser.

  • 1 tablespoon olive oil
  • 1 cup finely chopped white onion
  • 2 cloves garlic, minced
  • 2 (15 ounce) cans corn, drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Tortilla chips, for serving

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the drained corn and diced green chilies (with their liquid). Cook for 2-3 minutes, stirring occasionally.
  4. In a medium bowl, combine the mayonnaise, sour cream, Parmesan cheese, cilantro, chili powder, cumin, and cayenne pepper (if using). Mix well.
  5. Add the corn mixture to the mayonnaise mixture and stir to combine. Season with salt to taste.
  6. Spread the dip evenly in the skillet. Sprinkle the Monterey Jack and cheddar cheeses over the top.
  7. Bake for 15-20 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  8. Serve hot with tortilla chips.

Notes

  • For a spicier dip, add an extra pinch of cayenne pepper or a dash of hot sauce.
  • You can grill or roast the corn for a smokier flavor before adding it to the dip.
