A creamy, cheesy dip inspired by classic Mexican street corn, perfect for parties and game nights.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 can (15 ounces) corn, drained
  • 1 can (4 ounces) diced green chilies, undrained
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled cotija cheese (or feta)
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in the drained corn and diced green chilies. Cook for 2-3 minutes.
  5. In a separate bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth.
  6. Stir in the Monterey Jack cheese, cheddar cheese, cilantro, chili powder, salt, and pepper.
  7. Add the corn mixture to the cream cheese mixture and stir until well combined.
  8. Spread the dip evenly in the skillet.
  9. Top with crumbled cotija cheese.
  10. Bake for 20-25 minutes, or until the dip is heated through and bubbly.
  11. Serve hot with tortilla chips, crackers, or vegetable sticks.

Notes

  • For a spicier dip, add a pinch of cayenne pepper or a diced jalapeño to the corn mixture.
  • If you don’t have cotija cheese, feta cheese is a good substitute.
  • You can prepare the dip ahead of time and bake it just before serving.
