This is an authentic Mexican street corn recipe, also known as Elote. It’s a popular street food where corn on the cob is grilled or boiled and then slathered with a creamy, tangy, and spicy sauce, finished with cheese and chili powder. Perfect for a flavorful side dish or snack.

Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese, plus more for serving
  • 2 tablespoons lime juice
  • 1-2 teaspoons chili powder, plus more for serving
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Grill or boil the corn until tender and slightly charred.
  2. In a small bowl, whisk together the mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and cayenne pepper (if using).
  3. Season the mixture with salt to taste.
  4. Once the corn is cooked, carefully spread the creamy mixture all over each ear of corn.
  5. Roll the coated corn in additional crumbled cotija cheese.
  6. Sprinkle with extra chili powder and chopped cilantro.
  7. Serve immediately and enjoy!

Notes

  • For a spicier kick, feel free to add more cayenne pepper or a dash of hot sauce to the creamy mixture.
  • If cotija cheese is not available, you can substitute with feta cheese.
