4 cups corn kernels (fresh or frozen)
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup cotija cheese, crumbled
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1-2 teaspoons chili powder
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
If using fresh corn, cook until tender. If using frozen corn, thaw and drain.
In a large bowl, combine corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and garlic powder.
Mix everything together until well combined and the corn is evenly coated.
Season with salt and pepper to your liking.
Serve immediately or chill for later.
Notes
Cotija cheese can be substituted with crumbled feta if unavailable.
Adjust chili powder to your spice preference.
This salad is best served cold or at room temperature.
