- 1 can (15 ounces) corn kernels, drained
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup crumbled cotija cheese
- 2 tablespoons chopped red onion
- 1 tablespoon chopped jalapeño (optional)
- In a large bowl, combine corn, mayonnaise, sour cream, cilantro, lime juice, chili powder, cumin, salt, and pepper.
- Stir well to combine all ingredients.
- Gently fold in the cotija cheese, red onion, and jalapeño if using.
- Chill for at least 30 minutes before serving to allow flavors to meld.
- Serve cold.
Notes
- For a spicier salad, add more jalapeño or a pinch of cayenne pepper.
- If cotija cheese is unavailable, feta cheese can be substituted.
- This salad can be made a day in advance.
