  • 4 ounces bittersweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 2 tablespoons matcha powder
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C). Generously butter and flour two 6-ounce ramekins.
  2. In a heatproof bowl set over a saucepan of simmering water, melt the butter and bittersweet chocolate together, stirring until smooth. Remove from heat and let cool slightly.
  3. In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and salt until well combined.
  4. Gradually whisk the egg mixture into the melted chocolate mixture until smooth.
  5. Gently fold in the all-purpose flour and matcha powder until just combined. Do not overmix.
  6. Divide the batter evenly between the prepared ramekins.
  7. Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are set but the center is still soft.
  8. Let the cakes cool in the ramekins for 1 minute. Carefully invert each ramekin onto a serving plate.
  9. Dust with powdered sugar and serve immediately.
