  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup dried apricots, halved
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add garlic, ginger, cumin, cinnamon, turmeric, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  3. Add chicken pieces and cook until lightly browned on all sides.
  4. Stir in diced tomatoes and chicken broth. Bring to a simmer.
  5. Reduce heat to low, cover, and cook for 20 minutes, or until chicken is cooked through.
  6. Stir in dried apricots and cook for another 5 minutes, or until softened.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro before serving.
