Create perfect, high protein egg muffin cups using the water bath method for a tender, non-rubbery texture. These freezer friendly breakfast bites are ideal for meal prep.

  • 1/4 cup milk or unsweetened almond milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked, chopped fillings (e.g., spinach, ham, cheese)
  • Cooking spray or butter for the muffin tin

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin or line it with silicone liners.
  2. Prepare a hot water bath: Place the muffin tin inside a larger baking pan, like a roasting pan.
  3. In a large bowl, whisk the eggs, milk, salt, and pepper until just combined and slightly frothy. Do not over-whisk, as this can introduce too much air and make the bites tough.
  4. Distribute your cooked fillings evenly among the 12 muffin cups.
  5. Carefully pour the egg mixture over the fillings, filling each cup about three-quarters full.
  6. Pour hot water into the larger baking pan until the water level reaches halfway up the sides of the muffin tin cups. This water bath creates steam, which keeps the egg bites moist and prevents a rubbery texture.
  7. Bake for 20 to 25 minutes. The egg bites are done when the centers are set and a toothpick inserted near the center comes out clean.
  8. Remove the muffin tin from the water bath immediately. Let the egg bites cool in the tin for 5 minutes before carefully removing them.

Notes

  • For the best texture, always use a water bath (bain-marie) when baking egg muffin cups in the oven.
  • To freeze: Cool the egg bites completely. Place them in a single layer on a baking sheet and freeze until solid. Transfer the frozen bites to a freezer-safe bag. They keep well for up to 2 months.
  • To reheat from frozen: Microwave one or two bites for 60 to 90 seconds, or until heated through.
  • For a keto egg bites version, use low-carb fillings like bacon, mushrooms, and cheddar cheese.
