- 4 ripe pears, peeled, cored, and halved
- 2 cups mulled wine
- 1/4 cup granulated sugar
- 1 cinnamon stick
- 2 star anise
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Optional: whipped cream and cinnamon for garnish
- In a saucepan, combine mulled wine, granulated sugar, cinnamon stick, and star anise.
- Bring to a simmer over medium heat.
- Add pear halves to the simmering liquid.
- Reduce heat to low, cover, and poach for 20-30 minutes, or until pears are tender when pierced with a fork.
- Remove pears from liquid and let cool. Strain and reserve the poaching liquid.
- In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Slice the cooled poached pears.
- In parfait glasses, layer slices of poached pear with whipped cream.
- Drizzle a small amount of the reserved mulled wine poaching liquid over the layers.
- Repeat layers until glasses are full.
- Garnish with additional whipped cream and a sprinkle of cinnamon, if desired.
