Turn your potato wedges into the ultimate game-day snack! These Nacho-Style Loaded Potato Wedges deliver all the satisfying crunch and cheesy toppings of nachos, but with a hearty potato base. This recipe fixes common baking issues to give you perfectly crisp wedges every time.

Ingredients

Scale
  • 4 large Russet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese (or your favorite blend)
  • 1/2 cup cooked seasoned ground beef or black beans (optional)
  • 1/4 cup pickled jalapeño slices
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Cut each potato lengthwise into 8 wedges. You should have 32 wedges total.
  3. In a large bowl, toss the potato wedges with olive oil, salt, pepper, and garlic powder until evenly coated.
  4. Arrange the wedges in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary.
  5. Bake for 20 minutes. Flip the wedges and continue baking for another 15-20 minutes, until golden brown and crisp.
  6. Remove the wedges from the oven. Immediately sprinkle the shredded cheese evenly over the hot wedges.
  7. Return the baking sheet to the oven for 2-3 minutes, just until the cheese is fully melted and bubbly.
  8. Remove from the oven. Top the cheesy wedges with the ground beef or black beans, jalapeño slices, sour cream, and fresh cilantro.
  9. Serve immediately and enjoy your fix!

Notes

  • For extra crispiness, soak the cut wedges in cold water for 30 minutes, then dry them completely before tossing with oil.
  • Make sure your oven is fully preheated to maintain high heat for crisping.
  • You control the heat: adjust the amount of jalapeños to your preference.
