  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon salt

  • 1 cup buttermilk
  • 2 large eggs
  • Vegetable oil, for frying
  • For the Hot Sauce:
  • 1/2 cup unsalted butter
  • 1/4 cup cayenne pepper
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon white vinegar
  • 1 teaspoon brown sugar
  • Optional: Pickle slices, white bread for serving

Instructions

  1. In a shallow dish, whisk together flour, cornstarch, salt, black pepper, paprika, and cayenne pepper.
  2. In another shallow dish, whisk together buttermilk and eggs.
  3. Dip each shrimp first into the buttermilk mixture, letting excess drip off, then dredge in the flour mixture, ensuring it is fully coated. Place coated shrimp on a plate.
  4. In a large skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C).
  5. Fry shrimp in batches for 2-3 minutes per side, until golden brown and cooked through. Remove from oil and place on a wire rack to drain.
  6. While the shrimp are frying, prepare the hot sauce. Melt butter in a small saucepan over medium heat.
  7. Stir in cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Cook for 1 minute, stirring constantly.
  8. Remove from heat and stir in white vinegar and brown sugar.
  9. In a large bowl, toss the fried shrimp with the hot sauce until evenly coated.
  10. Serve immediately, optionally with pickle slices and white bread.
