2 cups leftover roasted Brussels sprouts, chopped
2 cups leftover roasted potatoes, chopped
1/2 cup diced onion
1/4 cup diced bell pepper (any color)
2 tablespoons olive oil
Salt and black pepper to taste
Optional toppings: fried eggs, hot sauce, crumbled bacon
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and bell pepper. Cook until softened, about 5-7 minutes.
Add the chopped roasted Brussels sprouts and potatoes to the skillet.
Cook, stirring occasionally, until the vegetables are heated through and slightly crispy, about 8-10 minutes.
Season with salt and pepper to taste.
Serve hot, with optional toppings if desired.
Notes
This recipe is very forgiving. Feel free to adjust the quantities of vegetables to your liking.
If you don’t have leftover roasted vegetables, you can roast fresh Brussels sprouts and potatoes beforehand.
Other vegetables like mushrooms or sweet potatoes can also be added.
