- 8 ounces cream cheese, softened
- 1 cup powdered sugar, plus more for rolling
- 1/2 cup white chocolate chips, melted and cooled slightly
- 1 tablespoon fresh lemon zest
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon vanilla extract
- In a medium bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar, beating until fully combined and fluffy.
- Stir in the melted white chocolate, lemon zest, lemon juice, and vanilla extract until you have a uniform mixture.
- Cover the bowl and chill the mixture in the refrigerator for at least 1 hour, or until firm enough to roll.
- Place extra powdered sugar in a shallow dish.
- Scoop the chilled mixture using a small spoon or a 1-inch cookie scoop. Roll the mixture between your palms to form smooth balls.
- Roll each truffle in the powdered sugar until fully coated.
