Make quick, creamy, no-bake cheesecake filling and pipe it into fresh strawberries for an easy summer dessert.

Ingredients

  • 12 large fresh strawberries
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice

Instructions

  1. Wash and thoroughly dry the strawberries. Carefully remove the green tops and use a small spoon or melon baller to hollow out a small cavity in the center of each strawberry.
  2. In a small bowl, beat the softened cream cheese until smooth.
  3. Add the powdered sugar, vanilla extract, and lemon juice to the cream cheese. Mix until the filling is completely smooth and creamy.
  4. Transfer the cream cheese mixture to a piping bag fitted with a star tip, or use a small zip-top bag with the corner snipped off.
  5. Pipe the cheesecake filling into the hollowed-out center of each strawberry until slightly mounded.
  6. Chill the stuffed strawberries for at least 15 minutes before serving.

Notes

  • For a firmer filling, chill the cream cheese mixture for 10 minutes before piping.
  • You can dust the tops with a little extra powdered sugar or finely chopped nuts just before serving.
  • Store leftovers in an airtight container in the refrigerator for up to two days.
