1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
4 cups sliced fresh peaches (about 4-5 medium)
1 tablespoon lemon juice
1 tablespoon granulated sugar
1 teaspoon cornstarch
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
In a medium bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Cut in the butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Set aside.
In a separate bowl, toss the sliced peaches with lemon juice, granulated sugar, and cornstarch.
Pour the peach mixture into the prepared baking dish.
Evenly sprinkle the oat topping over the peaches.
Bake for 30-40 minutes, or until the topping is golden brown and the peaches are bubbly.
Let it cool slightly before serving.
