1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
1/2 cup packed light brown sugar
1/2 cup molasses
1 large egg
1/2 cup hot water
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
Add the melted butter, brown sugar, molasses, and egg to the dry ingredients in the same bowl. Mix until just combined. Do not overmix.
Carefully pour in the hot water. Stir the batter until it is smooth and uniform. The batter will be thin.
Pour the batter into your prepared loaf pan.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
For a deeper molasses flavor, use dark molasses instead of light.
If you prefer a slightly richer loaf, substitute buttermilk for the hot water, reducing the baking time slightly.
This loaf keeps well wrapped tightly at room temperature for up to three days.
