In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, and pepper.
Spread the seasoned potatoes in a single layer on a large, oven-safe skillet (cast iron works well).
Roast the potatoes for 15 minutes until they start to soften.
While potatoes roast, season the steak cubes with the remaining salt and pepper.
In a small bowl, melt the butter. Stir in the minced garlic, rosemary, and thyme. Set aside.
Remove the skillet from the oven. Push the potatoes to one side of the pan.
Add the steak cubes to the empty side of the skillet. Drizzle half of the garlic butter mixture over the steak.
Return the skillet to the oven and cook for 8 to 10 minutes, or until the steak reaches your desired doneness (130°F for medium-rare).
Remove the skillet from the oven. Pour the remaining garlic butter mixture and the beef broth over the steak and potatoes. Stir gently to coat everything.
Let the mixture rest in the pan for 5 minutes. Garnish with fresh parsley before serving directly from the skillet.
Notes
For crispier potatoes, you can parboil them for 5 minutes before tossing with oil and roasting.
Use a meat thermometer to check the internal temperature of the steak bites for accuracy.
If you prefer a thicker sauce, cook the steak and potatoes on the stovetop for the last 2 minutes after adding the broth, stirring constantly until the liquid reduces slightly.
