4 (6 ounce) salmon fillets, skin on or off
1 pound fresh asparagus, trimmed
3 tablespoons olive oil, divided
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large lemon, thinly sliced
2 tablespoons fresh lemon juice
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, mix 2 tablespoons of olive oil, minced garlic, oregano, salt, and pepper.
Place the trimmed asparagus on one side of the prepared baking sheet. Drizzle with the remaining 1 tablespoon of olive oil and toss to coat. Spread the asparagus in a single layer.
Place the salmon fillets on the other side of the baking sheet, leaving space between the fish and the asparagus.
Brush the garlic-herb mixture evenly over the tops of the salmon fillets.
Squeeze the fresh lemon juice over the salmon and asparagus. Arrange the thin lemon slices on top of the salmon fillets.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
Serve immediately directly from the pan.
Notes
For crispier asparagus, you can roast the asparagus alone for 5 minutes before adding the salmon to the pan.
Do not overcook the salmon; check for doneness at the 12-minute mark.
Use fresh garlic for the best flavor in the coating.
