A hearty and flavorful one-pan Moroccan chickpea stew, perfect for a comforting and easy weeknight meal. This vegetarian dish features warming spices and tender chickpeas, all cooked together in a single pot.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • Pinch of cayenne pepper (optional)
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 cup vegetable broth
  • 1/2 cup chopped fresh cilantro
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Stir in minced garlic, cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes with their juice and the vegetable broth. Bring to a simmer.
  5. Add the rinsed and drained chickpeas. Stir to combine.
  6. Cover and simmer for 15-20 minutes, allowing the flavors to meld and the stew to thicken slightly.
  7. Stir in fresh cilantro.
  8. Season with salt and black pepper to taste.
  9. Serve hot.

Notes

  • For a spicier stew, add more cayenne pepper or a pinch of red pepper flakes.
  • You can add other vegetables like chopped bell peppers or spinach in step 3.
  • Serve with couscous or crusty bread for a complete meal.
