One-Pot Beef Stroganoff (30-Minute Comfort Classic)

A quick and comforting beef stroganoff made in one pot in about 30 minutes. This recipe is perfect for a weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound beef sirloin, thinly sliced
  • 8 ounces mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups beef broth
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat. Add beef and cook until browned, about 2-3 minutes. Remove beef from skillet and set aside.
  2. Add mushrooms and onion to the skillet. Cook until softened, about 5 minutes. Add garlic, paprika, salt, and pepper and cook for 1 minute more until fragrant.
  3. Pour in beef broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  4. Return beef to the skillet. Reduce heat to low and simmer for 10 minutes, or until beef is tender and sauce has thickened slightly.
  5. Stir in sour cream until well combined. Do not boil after adding sour cream.
  6. Garnish with fresh parsley and serve immediately.

Notes

  • Serve over egg noodles, rice, or mashed potatoes.
  • For a richer sauce, you can add a tablespoon of butter with the sour cream.
  • If you don’t have beef sirloin, you can use other tender cuts of beef like flank steak or sirloin tip.
