- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon smoked paprika
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup long-grain white rice, uncooked
- 2 cups vegetable broth
- 1/2 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro, for garnish
- 1 lime, cut into wedges, for serving
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the onion and bell pepper. Cook until softened, about 5 minutes.
- Stir in the garlic, cumin, oregano, and smoked paprika. Cook for 1 minute until fragrant.
- Add the rinsed black beans, uncooked rice, vegetable broth, water, salt, and pepper to the pot. Stir well to combine.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 20 minutes without lifting the lid.
- Remove the pot from the heat and let it stand, covered, for 10 minutes. Do not remove the lid during this resting period.
- Fluff the rice and beans mixture gently with a fork.
- Serve immediately, garnished with fresh cilantro and a wedge of lime.
Notes
- For a vegetarian meal, confirm your vegetable broth is meat-free.
- If you prefer a spicier dish, add 1/4 teaspoon of cayenne pepper with the other spices.
- This recipe doubles easily for larger batches.
