One-Pot Cheesy Taco Pasta

Make a quick and flavorful dinner combining taco seasoning and pasta in a single pot for easy cleanup.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 4 cups beef broth
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 8 ounces elbow macaroni or small pasta shape
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (for topping)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Brown the ground beef and chopped onion in a large skillet or Dutch oven over medium heat. Drain off any excess grease.
  2. Stir in the taco seasoning mix and cook for 1 minute until fragrant.
  3. Pour in the beef broth and the can of diced tomatoes and green chilies. Bring the mixture to a boil.
  4. Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is tender.
  5. Stir in the milk and continue to cook uncovered for 2 minutes until the sauce thickens slightly.
  6. Remove the skillet from the heat. Stir in the shredded cheddar cheese until it melts and the sauce becomes creamy.
  7. Serve immediately, topping each portion with a dollop of sour cream and fresh cilantro.

Notes

  • For a spicier dish, add 1/4 teaspoon of cayenne pepper with the taco seasoning.
  • You can substitute ground turkey or ground chicken for the ground beef.
  • If the sauce seems too thick after adding the cheese, add a splash more milk until you reach your desired consistency.
