  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Ro*Tel diced tomatoes and green chilies, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 (4 ounce) can chopped green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups water or beef broth
  • 8 ounces elbow macaroni
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the ground beef and chopped onion in a large pot over medium heat. Drain any excess fat.
  2. Stir in the kidney beans, diced tomatoes, Ro*Tel, tomato sauce, and green chilies.
  3. Add the chili powder, cumin, oregano, salt, and pepper. Mix well.
  4. Pour in the water or broth. Bring the mixture to a boil.
  5. Stir in the elbow macaroni. Reduce the heat to medium-low, cover, and simmer for 15 to 20 minutes, stirring occasionally to prevent sticking.
  6. Cook until the macaroni is tender and most of the liquid is absorbed.
  7. Remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy.
  8. Serve hot.

Notes

  • You can adjust the amount of chili powder or use a hotter variety of Ro*Tel for more heat.
  • For extra flavor, use beef broth instead of water.
  • Stir frequently during the simmer time since this is a one-pot dish.
