1 pound cremini mushrooms, sliced
3 cloves garlic, minced
1 small yellow onion, chopped
1 1/2 cups orzo pasta
4 cups vegetable broth
1/2 cup dry white wine (optional)
1/2 teaspoon dried thyme
Salt and black pepper to taste
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.
Add the sliced mushrooms and cook until they release their liquid and start to brown, about 6 to 8 minutes.
Add the chopped onion and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the orzo, vegetable broth, white wine (if using), and dried thyme to the pot. Season with salt and pepper.
Bring the mixture to a boil, then reduce the heat to maintain a steady simmer. Cook uncovered, stirring frequently to prevent sticking, until the orzo is tender and most of the liquid is absorbed, about 12 to 15 minutes.
Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
Taste and adjust seasoning if needed. Stir in the fresh parsley before serving.
Notes
If you skip the wine, use an extra 1/2 cup of vegetable broth.
Stirring often is key to achieving a creamy texture without adding extra liquid later.
For a richer flavor, use chicken broth instead of vegetable broth if you are not keeping the dish strictly vegetarian.
