1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon Italian seasoning
Salt and freshly ground black pepper to taste
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
2 cups chicken broth
1 cup heavy cream
8 ounces dried pasta (like penne or rotini)
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken, Italian seasoning, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
Pour in chicken broth and heavy cream. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Add the dried pasta to the skillet. Stir to combine and ensure the pasta is submerged in the liquid.
Cover the skillet and reduce heat to medium-low. Cook for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
Return the cooked chicken to the skillet. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
Add the fresh spinach and stir until wilted, about 1-2 minutes.
Serve immediately.
Notes
For a spicier dish, add a pinch of red pepper flakes with the garlic.
You can substitute heavy cream with half-and-half for a lighter sauce, but it may not be as rich.
Feel free to add other vegetables like mushrooms or bell peppers along with the garlic.
