  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cups chicken broth
  • 12 ounces uncooked penne pasta
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces, Italian seasoning, salt, and pepper. Cook until browned, about 5-7 minutes.
  3. Add minced garlic and chopped sun-dried tomatoes to the pot. Cook for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Add uncooked penne pasta, stir to combine, and reduce heat to medium-low. Cover and simmer for 12-15 minutes, or until pasta is al dente, stirring occasionally.
  6. Stir in heavy cream and Parmesan cheese until the sauce is creamy.
  7. Add fresh spinach and stir until wilted, about 2-3 minutes.
  8. Serve hot, garnished with fresh basil if desired.

Notes

  • You can substitute chicken breasts for chicken thighs if preferred.
  • Adjust the amount of garlic and sun-dried tomatoes to your taste.
  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
