This is a simple, one-skillet recipe for classic Beef Stroganoff. You get tender beef and a rich, creamy sauce without the cleanup hassle. It is quick comfort food ready fast.

  • 1 pound beef sirloin or flank steak, cut into 1 inch strips
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 8 ounces egg noodles

Instructions

  1. Cook egg noodles according to package directions. Drain and set aside.
  2. Season beef strips with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches; remove and set aside.
  4. Add onion and mushrooms to the skillet. Cook until softened, about 5 minutes.
  5. Stir in garlic and cook for 1 minute more.
  6. Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly.
  7. Gradually whisk in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer, stirring until sauce thickens slightly.
  8. Return the beef to the skillet. Reduce heat to low.
  9. Remove skillet from heat. Stir in sour cream until fully combined and the sauce is creamy. Do not boil after adding sour cream.
  10. Toss the sauce and beef mixture with the cooked egg noodles. Serve immediately.

Notes

  • For best results, do not overcrowd the pan when browning the beef.
  • Use full-fat sour cream for the creamiest texture.
  • You can substitute ground beef for steak strips in a pinch.
